The Pork Page

Shop our USDA Pork

We're trying something a little different for orders this season. Instead of painstakingly entering every cut into the online store, and then at time of your order painstakingly spending more time searching for that individual cut's specific size with multiple hogs worth of meat.... here is our price list per pound. Smaller cuts like bacon and sausage are in ~1 lb increments. Larger cuts include small, medium and large roasts. Tenderloin is about 1/2 lb increments, leaf lard is about 2-3 lb increments.

All of our pork has met state and federal regulations for sale within California and across state lines. All pork was processed and butchered in USDA licensed facilities under USDA inspection.

Pick-up is at our ranch gate, on the east end of Tehachapi near the wind turbines.

Any orders $100 or more in pork are free delivery anywhere in the Greater Tehachapi area.

Any orders $150 or more in pork are free delivery in Bakersfield city, Antelope Valley and Santa Clarita areas.


We are legally able to ship our pork across state lines, however shipping costs for overnight are quite high right now. We recommend supporting a local small farm in your area but are happy to serve you if you wish to try our Red Wattle pork as well. 


Through the end of April 2022, when you buy:

$50 in pork, receive 1lb of free unseasoned ground pork sausage

$100 in pork, receive either two free pounds of flavored sausage or $20 off on an additional roast cut to be added on the same purchase

$200 in pork, receive a free roast on us

Why shop local pork?

It's easy to be enticed with low prices at the local supermarket, but once you taste the difference it's hard to go back. One of the biggest drawbacks to shopping at the local grocer is having no knowledge or direct farm contact with how the live animal was treated, its health and quality of life, even what it was fed.

Why is this important?

Whatever an animal consumes is transferred to the product it produces, be it milk or in the meat. This is true even for plants, whatever the plant is grown in is present in the produce. 

While large scale agriculture is needed to feed a population, they're not able to duplicate permaculture systems the way a small farmer is able to focus and scale. Regenerative agriculture is something any scale producer can practice, but we're not seeing it practiced wide scale yet with large producers. 

What makes pork "Premium Pork" 

Not all pork is created equal, even among small farms. Premium pork has a different taste and composition than most of what you see available at your typical grocery store. Like Mangalitsa, Red Wattles are consider a premium pork among heritage hog breeds. Slower to grow, but worth the wait for a fantastic meat product. Premium pork should not only have any amazing flavor, but the marbling should be balanced and evenly distributed across the cuts as expected.

Our Favorite Recipes

Aside from affinity for bacon in and on everything, our next go-to pork cut is a roast. Life gets busy, but throwing a thawed roast in the slow cooker is as easy as it gets. We're most definitely 'taco people' so 10 out of 10 times this becomes tacos for the week which we separate out into smaller quantities to thaw as the week or week and a half progresses for an easy, filling and tasty fast meal. But you could also do pulled pork BBQ sandwiches, burritos, enchilada casserole, burrito bowls... so many options!

We season ours for the crockpot with a layer of garlic powder, sea  salt, ground black pepper, ground mustard powder, no-salt seasoning from Costco, and if we're prepping Mexican dishes we sometimes add paprika, chili power, onion powder and red pepper flakes. 

The rule of thumb that I generally go by is 6 hours on low for a small roast, 8 hours for a medium to large roast. Bone in or bone out is fine when cooking. When ready, the meat quite literally falls off the bone and is easy to shred with a couple forks or a shredding tool you can find on Amazon. Take a bite, it practically melts in your mouth.

Save your Bacon Fat

Bacon fat is so fantastic to cook in for an added boost of flavor. Step aside MSG!  We love using bacon fat when cooking up beef or elk burgers and patty melts, fried eggs, brussels sprouts, grilled onions, egg scrambles, potato scrambled, hashbrowns and more. We keep a glass mason jar in the fridge for saving and using bacon fat.

Replacing your Cooking Oils with Lard

So many oils we as a society cook with today are pretty bad for us. Remember when they told us fat was "bad"? Our family may cook occasionally with olive or avocado oil, but out main go-to has changed to lard. It's so easy to render from pork fat too! Simply set your crockpot on low and put in the thawed fat. Let it go all day. When it's done, the remaining pieces will look somewhat similar to pork rinds. Strain out any solids.


We line a casserole dish in saran wrap and wax paper to make it easier to remove later. Pour the rendered lard in and let it set. You can later put it in the freezer to firm up, remove, cut into cubes, bag and freeze for easy pre-made cooking cubes out of your freezer. It doesn't add to , change or alter the taste of food and it excellent for using with pastry and pie crust making too.


A surprising combo, try out Carolina style BBQ sauce with grilled bell peppers and sweet onions, with our Bratwurst links on a brioche bun. They've quickly become a favorite around here and the sweet tangy BBQ a nice mix-up from traditional Bratwurst pairings.

Muffin tin egg bites are a great meal planning hack to make a protein packed quick breakfast great for adults or kids. We add in a little bacon or sausage along with bell pepper, tomato, spinach and cheese. We freeze them in packs of two and thaw as needed.

Unseasoned Ground Sausage
